What's for Dinner?

Mozzarella Omelet

Have breakfast...for dinner

This simple recipe has been in my family for many years. I first remember watching my grandmother make this omelet for us; she used to just do her thing, adding a pinch of this and a pinch of that to create a delightfully light and fluffy treat for the entire family. It wasn't easy satisfying her large Italian crew on vacations, and the like! Then my father took over the recipe and passed it along to me. I hope to someday make this omelet for my hungry crew. This omelet is such a great recipe because it's simple enough for the working woman who puts in a full work day, but can also wow the pants off anyone from your hubby to your gossiping girlfriends!

Ingredients

For Omelet:

2-4 large eggs
EVOO (extra virgin olive oil) or any oil in the pantry
Thinly sliced mozzarella
Parmesan cheese
Salt
Pepper
1 ripe tomato

Directions

For Omelet:

Set your stove-top to medium-high, and sprinkle the frying pan evenly with EVOO. Then, scramble your eggs with parmesan cheese, salt, and pepper (honestly, it can be a sprinkling or as much as your taste buds need). Pour the mix into your heated frying pan. Once the bottom of your eggs are golden brown, place the pan into the broiler until the top of your eggs are fully cooked and are looking light and fluffy. Put your frying pan back on the stove-top, and flip the eggs over for an even browning. Place the sliced mozzarella on one side of your egg mixture, then fold the other side over to cover your filling. Cook this until the cheese is fully melted. Serve your omelet with fresh sliced, diced, or cubed tomatoes. Enjoy!
