Island Chicken

Spice up your chicken

Here's a fun way to transform your chicken without a whole lot of ingredients. It only makes two servings, but you can double it, triple it or more depending on the size of your crowd.

Ingredients

1 5-ounce package of Saffron rice mix
2 chicken breasts
2 TBSP all-purpose flour
1 tsp. curry powder
½ tsp. paprika
½ tsp. salt
1 T. butter
1 6.5-ounce jar of marinated artichoke hearts (do not drain)
¼ cup dry white wine
½ coup whipping cream

Directions

Cook rice according to the package. Flatten chicken. Combine flour, curry, paprika and salt in a shallow dish. Dredge chicken in flour mixture. Melt butter in a large skillet over medium heat. Add chicken and cook about 5 minutes per side. Remove chicken and keep warm. Wipe skillet with a paper towel. Add artichoke hearts, wine and whipping cream. Cook 3-5 minutes. Serve chicken over rice, spoon sauce over chicken. Viola!
