What's for Dinner?
Spinach Bacon Salad
A great side or a full meal

This is one of my all-time favorite salads. In fact, we just had it for dinner last night. Along with some crusty whole grain bread, it's a great meal. It's also a good side salad if you're serving a light meal.
Note: I guesstimate the amounts of spinach, bacon, cheese and onion I use depending on how many people I'm serving-so just use your judgment on the ratio you like. I typically use about one standard-size bag of organic spinach and half a package of bacon. Also, it makes way too much dressing in my opinion, and if you use it all it will drown your salad. I usually use less than half of the amount the recipe makes.
Salad:
Baby spinach leaves
Crumbled, cooked bacon (nitrate free to be healthy!)
Shredded sharp cheddar cheese
Sliced red onion
Dressing:
¼ cup olive oil
1 Tablespoon sugar
1Tablespoon lemon juice
1 Tablespoon light mayonnaise
2 Tablespoons Cider Vinegar
1 teaspoon mustard
1 clove garlic (through press)
Salt to taste
Directions: Whisk all dressing ingredients together and pour slowly over salad as you toss.
