What's for Dinner?

Winter Frittata

Great for brunch or dinner

This recipe is from my good friend Kathy, who lives on Mercer Island back in Washington. We were in playgroup together from the time our boys were just infants. She made this frittata for our group one afternoon, and it was so good. I think of her every time I make it!

Ingredients:

5 slices turkey bacon
2 cups thinly sliced red potatoes
2 cups thinly sliced red onion
½ cup chopped red bell pepper
2 teaspoons dried rosemary
1 teaspoon salt
2 Tablespoons olive oil
2 cups chopped spinach
2 Tablespoons minced garlic
4 whole eggs
8 egg whites
4 ounces feta cheese

Directions:

Sauté potato, onion, peppers, rosemary and salt in 1 Tablespoon of olive oil for 5 minutes over medium heat. Cover, and cook 10 minutes. Stir in spinach and garlic, sauté 1 minute. Beat eggs in bowl then add remaining ingredients as well as mixture you just cooked.

Preheat broiler.

Add remaining oil to pan and cook mixture 4 minutes over medium heat. Then transfer pan to oven and broil for 3 minutes. Cut into wedges and serve warm or at room temperature.
