Penne with Butter and Fontina
Simple comfort food

This is my idea of comfort food - not as goopy and greasy as traditional macaroni and cheese, but just simple and so good. It has just four ingredients, and kids love it too. I've had this in my self-made recipe book for years, and I'm not sure from which magazine's pages it's torn.
Ingredients:
8 ounces penne pasta cooked (I use Barilla Plus for extra protein and other good stuff)
1 4-ounce piece Fontina cheese, sliced very thinly
¼ cup butter
2 teaspoons fresh oregano, chopped
Directions:
Preheat oven to 400. Butter 11x17-inch glass baking dish. Arrange one-third of the pasta in prepared dish. Sprinkle with salt and pepper. Arrange half of cheese slices over pasta. Repeat layering. Top with remaining pasta. Sprinkle pasta with salt and pepper. Dot with butter.
Bake pasta uncovered until cheese melts, about 10 minutes. Toss pasta. Bake 2 minutes longer. Sprinkle past with chopped oregano and server immediately.
