What's for Dinner?

Grilled Vegetables in Your Oven

So many possibilities

-Stephanie Elliot, aka Manic Mommy

Grilled Peppers

These easy, yummy vegetables are great for vegetarians or as a side to a meat dish. Or, you can put them into tortillas with salsa, sour cream, black beans, avocados, etc.

Ingredients:

A variety of colored peppers
Onions
Cooking spray
Salt and Pepper

Directions:

All you do is slice up colored peppers and onions and lay them onto foiled cookie sheets that have been sprayed with Pam. Salt and pepper them. Heat oven to 450. Cook until they are desired texture and color (I prefer them crispy to burnt, but that's just me!). Turn them. Repeat with the Pam spray, salt and pepper.
