Lemony Flank Steak

Ingredients:
1 ½ lb Beef Flank Steak or boneless beef top sirloin steak
1 tsp. Grated fresh lemon peel
½ cup fresh lemon juice
2 Tbsp. Sugar
2 Tbsp. Soy sauce
1 ½ tsp. Fresh oregano, or ½ tsp. Dried oregano, crushed
1/8 tsp. Pepper
Directions:
Score meat by making shallow cuts at 1" intervals diagonally across the steak in a diamond pattern; repeat on other side of meat
Place meat in a plastic bag set into a shallow dish.
For marinade, in a one cup glass measure stir together lemon peel, lemon juice, sugar, soy sauce, oregano and pepper.
Pour marinade over meat; close bag.
Marinate in refrigerator for 2 hours or overnight.
Drain meat, reserving marinade.
Grill steak on an uncovered grill directly over medium coals for 12 to 14 minutes for medium doneness, 20 to 25 for well done, turning once during cooking and brushing occasionally with reserved marinade.
Discard any remaining marinade.
Wrap and refrigerate or freeze HALF of the steak for another meal.
To serve remaining steak, thinly slice meat across the grain.
