What's for Dinner?

Veggie Burger

This simple, easy meal also doubles as an amazing meatless meatball! Imagine that?

veggie burgerIngredients:

• 2 Tbsp olive oil
• 6 leeks, sliced
• 24 oz sliced button mushrooms
• 6 large carrots, peeled and grated
• 3 Tbsp of mixed seasoning of choice**
• 3 Tbsp of low sodium soy sauce
• 4 cups of canned beans (pinto or kidney), drained and rinsed well
• 12 oz of grated medium cheddar cheese
• About 10 sliced or a whole grain bread, torn into chunks

Directions:

1. In a large skillet, heat the oil and sauté the leeks, mushrooms and carrots with the soy sauce and seasoning mix for about 10 minutes or until the vegetables are getting soft.

 2. In the bowl of a food processor, put the beans, cheese and bread along with the cooked vegetables. Process by pulsing until a thick paste is formed. Drizzle in a little bit of olive oil as needed to moisten the mixture.

3. Form the mixture into 24 equal sized patties. Cook by heating a bit of oil in a pan and frying on both sides for 2-3 minutes of spray a cookie sheet with non-stick spray and place the patties on it, brush with a bit of olive oil on top and bake for 2-3 minutes on each side.

4. Serve on a multi grain roll with lettuce, tomato, cucumber, avocado, may, ketchup, mustard, you name it.

This mixture also makes a great meatless meatball too.

**Use one of the varying seasoning mixes available: Italian, Mexican, Asian, Moroccan, Graham Marsala, the list goes on.
