What's for Dinner?

Beef Brisket

Comfort food for those chilly nights

-Julie Ryan Evans

I'm not one for pot roast, but give me a good brisket, and I'm a happy eater. Here's a very quick and simple recipe for a nice comforting meal ... and the leftovers are even better.

beef brisketIngredients:

2-3 pound beef brisket
2 garlic cloves, quartered
1 cup catsup
1/3 cup brown sugar
1 teaspoon chili powder
1 teaspoon celery seed
¼ cup Worcestershire sauce

Directions:

Preheat oven to 325. Put brisket (fat side up) in a shallow roasting pan. Add ¼ cup water. Place quartered garlic cloves on top of meat, cover with foil and bake for 3-4 hours. When finished, trim and discard fat and slice meat thin or pull apart. Prepare sauce by blending catsup and remaining ingredients in a sauce pain. Bring to a boil and simmer 5-10 minutes. Layer meat and sauce in a dish. Bake 1 hour at 350. Serve alone or on sandwich rolls.
