Chinese-Style Chicken Wings for the New Year

January 26, 2009, begins the Year of the Ox on the Chinese calendar, but that doesn’t mean you can only celebrate the holiday with oxtail soup or by heading for the nearest Cantonese restaurant.
Cook up this quick and easy Chinese recipe that can become the staple of your party hors d’oeuvre repertoire all year-round.
Chinese-style Barbecue Sauce:
1/2 cup hoisin sauce
3 tablespoons soy sauce
3 tablespoons rice wine or sake
2 tablespoons sugar
2 tablespoons ketchup
2 tablespoons minced garlic
3 pounds chicken wings (about 15-18 wings)
Combine the Barbecue Sauce ingredients in a bowl. Add the chicken wings and toss lightly to coat. Cover with plastic wrap and let marinate at room temperature for 1 hour, or refrigerate for several hours or overnight, turning occasionally.
Preheat the oven to 375 degrees F. Line a rimmed cookie sheet with aluminum foil. Arrange the wings skin side down on the foil. Bake for 25 minutes, turn over and bake for 20 more minutes or until a deep golden brown. Transfer to a serving platter and serve immediately.
