What’s for Dinner?
Cheddar and Vegetable Quiche

This is a terrific one-dish, non-meat, main course meal. You can substitute any vegetables like asparagus or broccoli instead of the zucchini. Serve it with a nice crisp green salad and fresh fruit for dessert.
2 tablespoons olive oil
4 scallions, finely chopped
2 cloves garlic, minced
2 medium zucchini, diced
1 red bell pepper, diced
1 large potato, peeled, diced and parboiled
1 tablespoon dried basil
1 tablespoon dried chives
Salt and pepper
6 large eggs, beaten
1 tablespoon unsalted butter
4 ounces cheddar cheese, grated
1. Heat the olive oil in a large skillet and sauté the scallions, garlic and zucchini for about 4 minutes until tender. Next stir in the red bell pepper, potato, basil, and chives and sauté about 4 minutes until golden. Season with salt and pepper. Set aside.
Beat the eggs in a medium bowl.
2. Preheat the oven to 350.
3. Melt the butter into a 10-inch non-stick ovenproof skillet and add the beaten eggs and sautéed vegetables. Scatter the cheese over the top.
4. Bake about 20 minutes until set and firm.
5. Remove from oven and invert onto serving plate. Cut in wedges and serve.
