New England Cheese Soup

What’s better on a cold, snowy day than soup? And if it’s cheese soup, even better. With some crusty bread and a salad, I can’t think of many meals I’d rather eat in front of a fire.

This recipe from Twinfare is very easy and very good.



½ cup carrot, chopped
½ cup celery, sliced
½ cup sweet pepper, chopped
¼ cup green onion, sliced
½ cup butter
1/3 cup all purpose flour
½ cup chicken broth
¼ teaspoon ground white pepper
2 ½ cups milk
½ cup water
2 cups sharp cheddar cheese, shredded
2 cups American cheese, shredded


In saucepan cook carrot, celery, sweet pepper and onion in butter until tender. Stir in flour, chicken broth and white pepper. Add milk and water all at once. Cook and stir until bubbly. Cook and stir 1 minute more. Stir in cheeses until melted.
