Chicken with Homemade Green Apple Salsa

Gourmet, but very simple to make. And, it’s healthy too! The recipe comes from Canyon Ranch, a spa in the Berkshires.

All you do is chop a few things for an incredible homemade salsa and mix a few other things for a great dry rub for the shrimp.

You’ll find yourself making the salsa and rub over and over again. They’re great with shrimp and tofu too!

chicken with green apple salsaGreen Apple Salsa Ingredients:

1/2 cup diced Granny Smith apple
1/4 cup diced red onion
1/4 cup diced red bell pepper
2 tablespoons chopped fresh cilantro
2 tablespoons apple juice
2 tablespoons red wine vinegar
Pinch of chili powder

Spice Dry Rub Ingredients:

6 tablespoons paprika
1 tablespoons black pepper
1 tablespoons salt
1 tablespoon chili powder
2 teaspoons brown sugar
Pinch cayenne
2 chicken breasts, boneless and skinless

1. Combine all the salsa ingredients in a medium serving bowl and mix well. Cover and put into the frig until ready to use.

2. Combine all the spice dry rub ingredients in a small bowl. Lightly sprinkle the dry rub on the chicken.

3. Grill or broil the chicken until cooked through, about 4 minute per side.
Serve the chicken with the salsa on the side.

Serves 4
