Chicken Lettuce Wraps (calories in 3 wraps: 131)
Brenda J. Ponichtera, RD, author of Quick and Healthy Recipes and Ideas, recommends this versatile and super scrumptious concoction that can either be served as a hors d’oeuvre, a main dish or stuffed in pita bread halves.
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
12 large lettuce leaves (bib or butter)
2 tablespoons minced fresh ginger
One-half teaspoon salt (optional)
One-fourth teaspoon ground black pepper
One-half cup chopped fresh cilantro
Sauté the chicken and the ginger in a medium saucepan – that has been sprayed with nonstick cooking spray – for a few minutes until the chicken is no longer pink. Add salt, pepper and cilantro to the pan (makes 12 wraps).
How to Serve:
Place the chicken mixture in a bowl, and arrange the lettuce leaves and optional toppings on a nearby plate. Toss about one-fourth cup of the mixture in a leaf, roll up and enjoy!

1 package of Tofu Pups®
1 cup cornmeal
1.5 cup unbleached all-purpose flour
1 teaspoon. baking powder
3 tablespoons canola oil
1 tablespoons maple syrup (or 1 tablespoon sugar)
Three-fourth of a cup light soymilk or skim milk
One-half teaspoon salt
One-half teaspoon black pepper
One-half teaspoon smoked paprika
One-half teaspoon garlic powder
1 teaspoon white vinegar
Preheat oven to 450 F, and grease a cookie sheet or line it with parchment paper. Mix flour, baking powder, cornmeal, salt, spices, oil one-third cup milk and syrup together. After it is mixed, slowly add more milk until the mixture is wet, and thick enough to cover a spoon. Make sure to mix this well.
Cut the Tofu Pups® into thirds and dip each dog into the mixture. Place them on the cookie sheet and bake for 15 minutes until golden brown; rotate after 10 minutes.
Spicy Honey-Molasses Wings (calories in 4 wings: roughly 230)

5 pounds of chicken wings
Two-and-a-half cups spicy catsup
Two-thirds cup vinegar
One-half cup plus two tablespoons honey
One-half cup molasses
1 teaspoon salt
1 teaspoon Worcestershire sauce
One-half teaspoon onion powder
One-half teaspoon chili powder
Optional: one-half to one teaspoon smoke-flavored cooking sauce
Arrange wings in a greased 15”x10” pan, and bake uncovered at 375 degrees for 30 minutes. Drain, turn wings and bake for an additional 20 to 25 minutes. Combine remaining ingredients in a large saucepan while wings are baking. Bring the ingredients to a boil, reduce heat and simmer for 25 to 30 minutes.
Arrange one-third of the wings in a large slow cooker, and top with one cup of the sauce. Repeat the layers twice. Cook covered on low heat for 3 to 4 hours (makes about 4 dozen).
