4 Boneless, skinless chicken breasts (4-5 oz) or bone in skinless breasts

½ cup Grade A Dark Amber maple syrup (preferably Canadian)
1/3 cup Brown sugar

½ cup Green onions, chopped
1 Tbsp Butter
2 cups Dry stuffing mix
2 each Red delicious apples, unpeeled, finely diced
2 cups Apple cider

Mix maple syrup and brown sugar in a medium container and set ¼ cup of mixture aside. Trim all visible fat from chicken breasts. Add chicken to maple syrup mixture, cover and marinate in refrigerator for 1 hour. When chicken is done marinating, turn gill on medium high and grill chicken until done (approximately 8-10 minutes). Baste just before serving with marinade that was set aside.

To make the stuffing:
While chicken is marinating, melt butter in saucepan over medium heat. Add green onions and diced apples and sauté for 1-2 minutes. Add dry stuffing, then add apple cider and stir well. Cover and simmer over low heat (approximately 20 minutes) until all liquid is absorbed. Fluff with fork before serving.

To serve, spoon stuffing on plate and place chicken on top.

  1. Actually, this recipe is from a weight loss company called Sensei, and these are all healthy carbs for a balanced diet – so no need to feel guilty making it!

  2. As a diabetic, I’ll try the recipe with sugar free syrup, maple flavoring and truvia as a substitute for the marinade. As a former Canadian resident, I can’t wait to redesign the recipe because of my fondness for genuine maple syrup.
