Do the holidays have you on overload, and you’re finding it difficult to even think about cooking a meal for your family? I’m guessing you’re laughing hysterically right now (or perhaps crying?) at the obvious answer there. Here’s a super quick, yet pretty healthy meal, for these busy days so that you can focus on the shopping, wrapping, decorating, party planning … Fa la la la la.


4-6 boneless chicken breasts
2 Tablespoons melted butter
½ cup grated parmesan cheese
¼ cup dry bread crumbs
1 teaspoon parsley
1 teaspoon dried oregano
¼ teaspoon paprika
¼ teaspoon pepper
¼ teaspoon salt


Heat oven to 400. Spray baking pan with cooking spray. Dip chicken into melted butter and coat with combined remaining ingredients. Place in pan. Bake 20-25 minutes or until cooked through.
