Smoked Salmon Tostada

Salmon is known for being rich in omega-3 fats, which are good for brain health and prevention of heart disease (among other good things). It’s recommended that we eat 2 (4 oz) servings of omega-3 rich fish each week.

Smoked salmon has a delicious flavor all its own. If fresh smoked salmon is out of your price range, you can find it in packages next to the tuna in your grocery store. Save any leftover to toss into a salad … yum!

Serves 4

2 large 12″ or 4 individual 6″ whole wheat tortillas
4 oz whipped cream cheese
6-8 oz smoked salmon
½ c chopped green onions

Toast tortilla under the broiler for 2-3 minutes until golden brown. Spread room temperature cream cheese over tortillas, and then top with salmon and onions. Garnish with fresh dill or capers if desired.

Serve with a mixed green salad.
