Want help sticking to that New Year’s resolution? Create a spa-style mini salad bar at home. It’s a great way to entice you to get those eight to 10 servings of fruits and veggies and eat healthier.
Set out a medium bowl of lettuce surrounded with lots of little bowls of fixings and different dressings on the side. Everyone helps themselves, just like at a real salad bar.
It’s easy to keep fixings in the fridge. Many healthy ingredients are available ready-made in the supermarket, so you don’t need to fuss. A home-salad bar is also a great way to use leftovers. Just dice or slice any leftover cooked veggies, meats or fish to add as salad toppings.
Keep the side bowl fixings small so you can change up the combo of fixings every few days.
Some spa salad bar fixing suggestions:
-Steamed veggies: broccoli, cauliflower florets
-Grated raw veggies: carrots, jicama, radishes, red cabbage
-Diced beets, cucumbers, tomatoes, red onion
-Chopped fresh fruit
-Cooked beans: garbanzo, edamame, red kidney
-Low fat cheeses
-Chopped nuts and seeds: almond slivers, ground flax, pumpkin, sunflower
