Super (Bowl) White Bean Dip
Perfect with chips while rooting for your favorite team!
No need to toss out your healthy eating resolutions when you turn on the TV. This white bean dip is low in calories and packed with nutrition. Beans are fiber-rich, making them great cholesterol busters and perfect for diabetics. In addition to heart-beneficial folate, white beans are a great source of thiamin, which feeds the neurotransmitters essential to memory and may help stave off those senior moments. Try this dip and you may feel more virtuous when you’re being a couch potato.
1 can navy or cannellini beans
1 clove garlic
1 tsp herbs de Provence
1 tbsp orange juice
Wash and strain beans. Puree all ingredients in a blender or food processor. Serve as a dip with baked corn chips or chopped vegetables. This spread is also a tasty filling for baked potatoes, or can be used instead of mayonnaise on a turkey sandwich.
