Black Bean Tostadas

-Adapted from Vegan Cook’s Bible (Robert Rose; April 2009)

A snap to pull together.

2 10-inch corn tortillas
1/2 cup canned black beans
1/2 cup cooked rice
1⁄2 cup shredded lettuce
1 tomato, seeded and chopped 1⁄2 ripe avocado, sliced
1⁄4 cup black olives
1⁄4 cup mayonnaise

In a skillet over medium-high heat, toast tortillas for 30 seconds on each side. Place tortillas on serving plates.

Spread 1⁄2 of the beans and rice on each tortilla. Divide lettuce, tomato, avocado, olives and mayonnaise in half and pile each in that order
over the tortillas.

    umm manicmommy, mayo and olives, i think, are what makes the dish. how about some sour cream instead of mayo!? now that’s a tostada!

    Perhaps the recipe calls for mayo instead of sour cream because it’s from a vegan cookbook.
