Hungry Man’s Quiche Recipe for Leftover Holiday Ham

This special holiday recipe comes from the Old Farmer’s Almanac Everyday Cookbook. Don’t know what to do with that leftover holiday roast beast? No problem! Follow the simple instructions below and you’ll have even the Grinches of your family running to the dinner table!
1 unbaked (9 1/2-inch) deep-dish pie shell
3 small potatoes, mashed
1/4 cup cubed cooked ham
2 cups shredded cheddar cheese
5 large eggs
1 cup milk
Preheat the oven to 325°F. Prick the bottom of the pie shell with a fork in several places and prebake for 15 minutes; remove from the oven, then increase the oven temperature to 375°F. Layer the potatoes, ham and then cheese into the shell. In a medium bowl, beat the eggs and milk together, and pour the mixture into the shell. Bake for 30 minutes at 375°F. Reduce heat to 350°F and bake for an additional 10 minutes. Makes 6 to 8 servings.
