A Father eatingEveryone has a man in her life that is difficult to buy for. But come Father’s Day, you want the perfect gift – and it’s been found. Skip the traditional tie this year, and try a fabulous meal instead. Pack Dad an amazing sandwich and send him out for a day of golfing. Or relieve him of housework and serve him up some mouthwatering pork chops. Or set up a comfortable chair in front of his favorite game with a plate full of cheesy meatballs. Whatever you do to show Dad you care, do it with food. After all, everyone knows the way to a Dad’s heart is through his stomach!

Tomato and Mozzarella Chicken Meatballs

Tomato and Mozzarella Chicken Meatballs

A little kick of spice from the red pepper flakes and the cheesy surprise in the center are bound to make these meatballs Dad’s new favorite dish.

Serves 4

Ingredients:

1/2 small onion, diced
2 cloves garlic, minced
1 pound ground chicken
1 egg, lightly beaten
3 Tbsp tomato paste
1 cup breadcrumbs
1 tsp oregano
2 Tbsp basil, chiffonade
salt, as needed
pepper, as needed
red pepper flakes, as needed (optional)
1 cup fresh mozzarella cheese, diced
olive oil, as needed for cooking
tomato sauce, as needed for garnish

Directions:

1. In a large bowl, combine the onion, garlic, and ground chicken. Add the egg and tomato paste and mix to combine.
2. Add the breadcrumbs, herbs, salt and pepper, and red pepper flakes. Mix well to combine. Using your hands, roll the mixture into small balls. Stuff one piece of mozzarella cheese into the center of each meatball. Make sure it’s completely encased.
3. Heat the olive oil over medium heat in a large skillet. Place the meatballs in the hot pan, and allow to cook until nicely browned on each side and cooked through, about 8-10 minutes. Serve with the chunky tomato sauce and your favorite type of pasta.

Herb Crusted Pork Chops with Balsamic Onions

Chops with Balsamic Onions

This is a hearty dinner that will have Dad asking for seconds, and maybe thirds! The herb and breadcrumb mixture makes an incredibly crispy crust that he’ll smell a mile away.

Serves 4

Herb Crusted Pork Chops:

1/2 cup flour
2 eggs, lightly beaten
1 cup bread crumbs
1 Tbsp thyme, chopped
1 Tbsp rosemary, chopped
2 tsp sage, chopped, chopped
4 pork chops
salt, as needed
pepper, as needed
4 Tbsp olive oil

1. Preheat the oven to 400 degrees Fahrenheit.
2. Prepare a breading station by placing the flour, eggs, and bread crumbs in three separate bowls. Season the bread crumbs with the fresh herbs.
3. Season the pork chops with salt and pepper. Dip each pork chop into the flour. Shake to remove excess. Then dip into the egg, and then generously coat with bread crumbs. Set aside.
4. In a large saute pan, heat the oil over medium high heat. When the oil is hot, place the pork chops in and pan fry until golden brown on each side, about 2-3 minutes. Transfer the pork chops to a cookie sheet.
4. Place the pork chops in the oven and bake until cooked through, another 5-6 minutes. Remove from the oven and allow to rest briefly. Serve with balsamic onions.

Balsamic Onions:

1 Tbsp olive oil
1 large onion, thinly sliced
salt, as needed
pepper, as needed
1-2 Tbsp balsamic vinegar

1. In a large saute pan, heat the olive oil over medium high heat. Add the onions and saute until translucent.
2. Season salt and pepper, and continue cooking until the onions begin to caramelize. Add the balsamic vinegar and continue to cook until the onions are completely caramelized and very soft. Serve on top of the finished pork chops.

Creamy Sausage and Mushroom Sandwiches

This sandwich makes for the perfect Father’s Day lunch. Why? Because it combines everything Dad loves: delicious sausage, sauteed mushrooms, and creamy cheese.

Serves 2

Ingredients:

1 baguette
olive oil, as needed
1 Tbsp olive oil
1/2 onion, finely sliced
1 shallot, thinly sliced
1 box mushrooms, chopped
2 cloves garlic, finely minced
3 Italian sausages, cooked, chopped
1/2 cup Boursin cheese
fresh herbs (rosemary, thyme, sage), as desired
salt, as needed
pepper, as needed

Directions:

1. Set the oven on the broil setting. Cut the baguette into 4″ pieces and cut in half. Drizzle the bread with olive oil and place in the oven. Allow to toast until brown, then lower the heat and keep warm.
2. Heat the olive oil in a large saute pan over medium high heat. Add the onion and the shallot, and cook until lightly browned, 3-4 minutes.
3. Add the mushrooms and the garlic, cook until the mushrooms are soft and the garlic is fragrant, 2-3 minutes. Reduce the heat, and add the sausage, allow it to re-heat thoroughly. When the whole mixture is hot, remove from heat.
4. Place the cheese in a large bowl, and cover with the warm mushroom mixture. Mix to combine.
5. Fill the baguette with mushroom mixture and press closed. Serve warm.
