Beer-Battered Broccoli

Ingredients:

1 cup beer of your choice
1 cup flour
1/4 cup chopped parsley
Salt

Preparation:

Let the batter rest 1 hour. Dip 4 cups broccoli florets into the batter. Fry in 375 degrees F vegetable oil until florets are golden brown (should take about 2 minutes). Drain oil on paper towels. Serve with sour cream if desired.

Irish Grilled Cheese

Ingredients:

4 tbs softened butter
2 tbs parsley
2 tbs scallions
2 tbs chives
8 slices of bread
Irish cheddar cheese
Bread-and-butter pickles

Preparation:

Combine the softened butter with the parsley, scallions and chives. Spread the mixture on 4 slices of bread, top each with sliced Irish cheddar cheese and bread-and-butter-pickles. Cover with 4 more slices of bread. Spread plain butter on the outside of the sandwiches and fry in a skillet until golden on both sides. Spread the remaining herb butter on the warm sandwiches. Slice into quarters, and press the cut sides in more chopped herbs.

Avocado Hummus

Ingredients:

2 avocados
1/2 jalapeno pepper
Hummus
Salt
Lemon juice

Preparation:

Puree the avocados and jalapeno pepper in a food processor. Stir in a 7-ounce tub of hummus, a squeeze of lemon juice and a pinch of salt. Garnish with chopped cilantro and serve with celery sticks or whichever vegetable you desire.
