To conclude National Watermelon Month, here at BettyConfidential we’re whipping up some delicious, in season watermelon cocktails. These cocktails are light, refreshing and full of flavor!
Recipe adapted from Ina Garten’s Watermelon Mojitos.
Serving size: 6
- 5- 6 slices of watermelon, large cuts
- 1 handful of fresh mint leaves, chopped
- 12 ounces of vodka or light rum
- 1/2 cup of local honey
- three limes, juiced
- watermelon slices for serving
Directions: Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor or blender, and puree on medium-high for a few seconds. Next, place the mashed mint into a large pitcher with 2 cups of pureed watermelon, the liquor, honey, and lime juice. Stir to combine. Lastly, pour the mixture into individual glasses with ice cubes, garnish with extra watermelon slices and enjoy!
