Lots of people will be cooking up feasts this weekend. And there’s going to be a lot of first time cooks attempting to make it a fab Cinco de Mayo. For all the super busy cooks, the first timers and people like me (we want it easy!) here are some recipes from New York Times and USA Today best selling author Susan Mallery. The tasty recipes are based on her books Summer Days (June 2012), Summer Nights (July 2012) and All Summer Long (August 2012).

Fool’s Gold Frozen Margarita

Ingredients

1 small can of frozen limeade concentrate

2 tablespoons frozen orange juice concentrate

6 ounces of tequila

2 ounces of triple sec

1 ounce Cointreau (optional)

Directions

Fill a blender with ice. Add the remaining ingredients and blend until smooth. Garnish with a slice of orange.

Serves 4-6

Guacamole

Ingredients

2 ripe avocados, preferably Haas

2 tablespoons onions, pressed through a garlic press

1 teaspoon Ground cumin

1 garlic clove, pressed through a garlic press

1 tablespoon fresh cilantro, chopped

½ tomato, diced

½ jalapeno chiles, stemmed, seeded and finely diced

Directions

Remove the avocados from their skin, and discard the skin and pit. Add the rest of the ingredients except the cilantro, tomato, and jalapeno. Mash everything together with a fork until mixed well. Stir in the remaining ingredients. Serve with tortilla chips.

Note: Don’t make the guacamole until just before you’re going to serve it because it will discolor quickly.

Quick & Easy Nachos

Ingredients

3 cups tortilla chips, whole

2 cups cheddar cheese, shredded

1 can black beans, drained and rinsed

4 green onions (scallions), sliced

2 cups Lettuce, shredded for serving

1 tomato, diced

1 avocado, chopped

Salsa, if desired

Ranch dressing, if desired

Directions 

Spread the chips on a plate and top with black beans and cheddar cheese. Microwave just until cheese is melted. Top with other ingredients.

Jalapenos Poppers

8 ounces cream cheese, softened

8 ounces cheddar or Monterrey Jack cheese, shredded

½ teaspoon garlic salt

12 jalapenos, sliced in half and seeded

½ cup breadcrumbs

Chili powder

Directions

Mix together the cheeses and the garlic salt. Fill pepper halves with cheese mixture, then roll in bread crumbs. Sprinkle with chili powder.

Bake 20 minutes for hot, 40 minutes for mild.

    I LOVE margaritas and nachos! One of my favorite comfort foods. I just finished her latest book, Summer Days (which was FABULOUS), and I love all her recipes! I’m not sure about the Jalapeno poppers, though, but I’m printing out these recipes to try this weekend! Thanks!

    I forgot about these recipes until today. I read Summer Nights, but All Summer Long comes out in a few days & I am thinking that these recipes would be great for reading & snacking!
