These enchiladas were made, photographed and consumed in less than 24 hours. Yes! That is how amazing they are. I have a slight obsession with Mexican food, but finding unprocessed tortillas is difficult. The ingredient list in most tortilla brands reads something like this: Enriched Bleached Wheat Flour, Water, Vegetable Shortening, Soybean Oil, Hydrogenated Soybean Oil and/or Palm Oil, Sugar, Leavening (Sodium Bicarbonate, Sodium Aluminum Sulfate, Corn Starch, Monocalcium Phosphate and/or Sodium Acid Pyrophosphate, Calcium Sulfate), Distilled Monoglycerides, Enzymes, Wheat Starch, Calcium Carbonate, Antioxidants (Tocopherols, Ascorbic Acid, Citric Acid), Cellulose Gum, Guar Gum, Dough Conditioners (Fumaric Acid, Sodium Metabisulfite and/or Mono- and Diglycerides), Calcium Propionate and Sorbic Acid (to preserve freshness). Honestly, I think I only understand about 5 of those ingredients and I want to make sure I understand exactly what I am putting into my body. So, when I can healthify my favorite foods, and it turns out well, I feel it is my duty to share this magical news with the world – so you can enjoy it too!
Typically, when I create a Mexican food dish that needs a tortilla I usually make them myself. Although it takes extra effort, it usually does the trick for me. My goal was to create authentic-styled enchiladas. You could easily forgo the cheese, but because I can handle raw cheese every now and then, I chose to go all out.
